Steak Bites with Mushrooms and Sweet Potatoes

Ingredients

  • ¾ lb flank steak
  • ¾ lb sweet potatoes
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 1 (8-oz) pkg sliced mushrooms 
  • ¼ tsp ground ginger
  • 1 Tbsp olive oil, divided
  • 1½ Tbsp balsamic vinegar 
  • ½ Tbsp butter 
  • 1 clove garlic, minced

Instructions

  1. Cut steak and potatoes into 1-inch cubes; sprinkle steak with ⅛ tsp each salt and pepper.
  2. Cook potatoes, mushrooms, ginger, and ⅛ tsp each salt and pepper in ½ Tbsp hot oil in a large skillet over medium-high heat 8 to 10 minutes or until lightly browned and tender. Remove potato mixture from skillet; keep warm.
  3. Cook steak in ½ Tbsp hot oil in same skillet over medium-high heat 5 minutes. Add potatoes, vinegar, butter, and garlic to skillet; cook until garlic is fragrant and steak is cooked to desired doneness.
