Steak Bites with Mushrooms and Sweet Potatoes

Ingredients
- ¾ lb flank steak
- ¾ lb sweet potatoes
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 1 (8-oz) pkg sliced mushrooms
- ¼ tsp ground ginger
- 1 Tbsp olive oil, divided
- 1½ Tbsp balsamic vinegar
- ½ Tbsp butter
- 1 clove garlic, minced
Instructions
- Cut steak and potatoes into 1-inch cubes; sprinkle steak with ⅛ tsp each salt and pepper.
- Cook potatoes, mushrooms, ginger, and ⅛ tsp each salt and pepper in ½ Tbsp hot oil in a large skillet over medium-high heat 8 to 10 minutes or until lightly browned and tender. Remove potato mixture from skillet; keep warm.
- Cook steak in ½ Tbsp hot oil in same skillet over medium-high heat 5 minutes. Add potatoes, vinegar, butter, and garlic to skillet; cook until garlic is fragrant and steak is cooked to desired doneness.
