Ingredients

  • ½ Ib boneless, skinless chicken thighs, cubed (or use boneless, skinless chicken breasts)
  • ⅓ cup chopped onion
  • 1 clove garlic, minced
  • 1 tsp Italian seasoning
  • ⅛ tsp salt
  • 2 tsp olive oil
  • 1 (4.4-oz) cup microwavable brown rice
  • ⅓ cup heavy cream
  • ⅓ cup freshly grated Parmesan cheese

Instructions

  1. Cook chicken, onion, garlic, seasoning, and salt in hot oil in a skillet over medium-high heat 8 minutes or until chicken is browned and done.
  2. Meanwhile, cook rice according to package directions. Add rice, cream, and cheese to skillet; cook 2 to 3 minutes or until thick and creamy.

  • 1 small clove garlic, minced
  • 2 tsp olive oil
  • 3 cups chopped kale
  • 2 tsp white wine vinegar
  • ⅛ tsp salt

Side Dish Instructions

  1. Cook garlic in hot oil in a large skillet over medium heat 1 minute or until fragrant. Add kale, vinegar, and salt; cook 5 minutes or until kale wilts.
