Oven-Baked Chicken Parmesan

Ingredients

  • ⅓ cup almond flour
  • 3 Tbsp freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 large egg
  • ½ lb boneless, skinless chicken breasts
  • ¼ tsp garlic powder
  • ¼ tsp pepper
  • ⅛ tsp salt
  • ⅔ cup no-sugar-added marinara sauce
  • 2 slices mozzarella cheese
  • Sliced fresh basil (optional)

Instructions

  1. Preheat oven to 425°F. Combine almond flour, Parmesan cheese, and Italian seasoning in a shallow bowl. Whisk egg in another shallow bowl.
  2. Sprinkle chicken with garlic powder, pepper, and salt. Dip chicken in beaten egg, and dredge in almond flour mixture, pressing gently to adhere. Place chicken on a greased wire rack on a rimmed baking sheet.
  3. Bake 18 to 20 minutes. Top with marinara and mozzarella. Bake 2 to 3 minutes longer or until cheese melts. Sprinkle with basil, if desired.

  • 1½ Tbsp olive oil
  • ¼ tsp pepper
  • ⅛ tsp salt
  • 2 Tbsp freshly grated Parmesan cheese

  1. Preheat oven to 425°F. Toss asparagus with oil, pepper, and salt on a greased rimmed baking sheet; spread in a single layer.
  2. Bake 10 minutes or until crisp-tender. Sprinkle with cheese.
