Oven-Baked Chicken Parmesan
Parmesan-Roasted Asparagus
Ingredients
- ⅓ cup almond flour
- 3 Tbsp freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- 1 large egg
- ½ lb boneless, skinless chicken breasts
- ¼ tsp garlic powder
- ¼ tsp pepper
- ⅛ tsp salt
- ⅔ cup no-sugar-added marinara sauce
- 2 slices mozzarella cheese
- Sliced fresh basil (optional)
Instructions
- Preheat oven to 425°F. Combine almond flour, Parmesan cheese, and Italian seasoning in a shallow bowl. Whisk egg in another shallow bowl.
- Sprinkle chicken with garlic powder, pepper, and salt. Dip chicken in beaten egg, and dredge in almond flour mixture, pressing gently to adhere. Place chicken on a greased wire rack on a rimmed baking sheet.
- Bake 18 to 20 minutes. Top with marinara and mozzarella. Bake 2 to 3 minutes longer or until cheese melts. Sprinkle with basil, if desired.

- Preheat oven to 425°F. Toss asparagus with oil, pepper, and salt on a greased rimmed baking sheet; spread in a single layer.
- Bake 10 minutes or until crisp-tender. Sprinkle with cheese.
