Garlic Butter Steak and Potatoes

Ingredients

  • 1 (15-oz) pkg frozen oven roasters red potato wedges and onions
  • 2 cloves garlic, halved
  • ¾ lb top sirloin steak
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Tbsp olive oil
  • 1½ Tbsp garlic and herb butter, cut into 2 pieces

Instructions

  1. Preheat oven to 450°F. Spread potatoes, onions, and garlic on a greased rimmed baking sheet. Bake 20 minutes. Season with salt and pepper, if desired.
  2. Meanwhile, sprinkle steak all over with ½ tsp each salt and pepper. Cook steak in hot oil in a cast-iron skillet over medium-high heat 6 minutes. Flip and cook 2 to 4 minutes or to desired doneness. Remove from heat. Top with butter; let stand 5 minutes. Thinly slice steak.
  3. Serve steak with roasted vegetables.

Side Dish Ingredients

  • ½ (11-oz) pkg spring mix
  • 1 small tomato, cut into wedges
  • ½ (8-oz) pkg fresh mozzarella cheese pearls
  • ⅓ cup creamy Italian dressing
  • ½ cup whole-grain large cut Italian herb croutons

Side Dish Instructions

  1. Toss together all ingredients in a large bowl. Season with salt and pepper, if desired.
