Crispy Lemon-Parmesan Shrimp

Ingredients

  • 6 Tbsp almond flour
  • ¼ cup freshly grated Parmesan cheese
  • ½ Tbsp lemon-pepper seasoning
  • ¼ tsp salt
  • 1 egg, lightly beaten
  • ¾ lb peeled and deveined, large raw shrimp
  • 2 Tbsp butter
  • 1 Tbsp olive oil

Instructions

  1. Combine flour, cheese, seasoning, and salt in a shallow bowl. Place egg in a second shallow bowl.
  2. Dip shrimp in egg, letting excess drip off. Dredge shrimp in flour mixture, and set aside.
  3. Cook shrimp in hot butter and oil in a large skillet over medium heat 2 to 3 minutes per side or until golden brown.

Side Dish Ingredients

  • 1 lb asparagus, trimmed
  • 1½ Tbsp olive oil
  • ¼ tsp garlic powder
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer.
  2. Bake 18 minutes or until asparagus is tender and lightly charred.
