Salmon-Bacon Caesar
Ingredients
- 1 (1-lb) salmon fillet
- 1½ Tbsp olive oil
- 1 (11.6-oz) pkg bacon Caesar salad kit
- ½ (5-oz) pkg baby spinach
- 1 cup grape tomatoes
- ¼ cup freshly grated or shredded Parmesan cheese
Instructions
- Preheat broiler. Arrange oven rack on second shelf. Place fish on a foil-lined greased baking sheet. Drizzle with oil. Broil 7 to 10 minutes or until fish flakes with a fork.
- Toss together salad kit ingredients, spinach, and tomatoes in a large bowl. Flake fish into large pieces, and add to salad. Sprinkle with cheese.
