Balsamic-Garlic Beef Strips
Blue Cheese Chopped SaladIngredients
- 2 lb sirloin steak, thinly sliced
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp vegetable oil, divided
- 4 cloves garlic, minced
- 1 onion, thinly sliced
- 2 bell peppers, thinly sliced
- ¼ cup balsamic vinegar
- ¾ cup low-sodium beef broth
Instructions
- Cook steak with salt and pepper in 1 Tbsp hot oil in a Dutch oven over medium-high heat 6 minutes or until browned. Add garlic; cook 1 minute. Remove beef from pot.
- Add 2 Tbsp oil, onion, and bell peppers to pot. Cook 6 minutes or until vegetables are tender.
- Cook 1 minute, stirring constantly; stir in beef mixture, vinegar, and broth. Reduce heat, and simmer 5 minutes.
Side Dish Ingredients
- 6 cups chopped romaine lettuce
- 1¼ cups grape tomatoes, halved
- ½ cup blue cheese dressing
Side Dish Instructions
- Combine lettuce and tomatoes in a bowl; drizzle with dressing, and toss. Season with pepper to taste.
