Balsamic-Garlic Beef Strips

Ingredients

  • 2 lb sirloin steak, thinly sliced
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp vegetable oil, divided
  • 4 cloves garlic, minced
  • 1 onion, thinly sliced
  • 2 bell peppers, thinly sliced
  • ¼ cup balsamic vinegar
  • ¾ cup low-sodium beef broth

Instructions

  1. Cook steak with salt and pepper in 1 Tbsp hot oil in a Dutch oven over medium-high heat 6 minutes or until browned. Add garlic; cook 1 minute. Remove beef from pot.
  2. Add 2 Tbsp oil, onion, and bell peppers to pot. Cook 6 minutes or until vegetables are tender.
  3. Cook 1 minute, stirring constantly; stir in beef mixture, vinegar, and broth. Reduce heat, and simmer 5 minutes.

Side Dish Ingredients

  • 6 cups chopped romaine lettuce
  • 1¼ cups grape tomatoes, halved
  • ½ cup blue cheese dressing

Side Dish Instructions

  1. Combine lettuce and tomatoes in a bowl; drizzle with dressing, and toss. Season with pepper to taste.
