Ranch CucumbersIngredients
- 6 Tbsp mayonnaise
- 3 Tbsp chopped fresh basil
- 1½ tsp lemon juice
- 1 (8-oz) block sharp Cheddar cheese
- 12 large romaine lettuce leaves
- 1 lb low-sodium deli-sliced roast beef (see Note)
- 1½ avocados, sliced
Instructions
- Combine mayonnaise, basil, and lemon juice in a small bowl. Cut cheese into 24 pieces.
- Top lettuce leaves with roast beef, cheese, mayonnaise mixture, and avocado.
Side Dish Ingredients
- 6 Tbsp Ranch dressing
- 2½ cups sliced cucumbers
- ¼ tsp pepper
Side Dish Instructions
- Drizzle dressing on cucumbers; season with pepper.
