Coconut-Almond Sauce Steak

Ingredients

  • 2 lb skirt steak
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 (13.66-oz) can unsweetened coconut milk
  • ¼ cup almond butter
  • 2 Tbsp lime juice
  • 2 Tbsp low-sodium soy sauce
  • ½ tsp crushed red pepper (optional)

Instructions

  1. Preheat grill to medium-high heat. Sprinkle steak with salt and pepper. Grill, covered, 4 to 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
  2. Meanwhile, whisk together coconut milk, almond butter, lime juice, soy sauce, and red pepper in a large saucepan. Cook over medium-high heat 3 to 4 minutes or until sauce is smooth and thoroughly heated. Serve with steak.

  • 1½ lb Broccolini
  • 3 Tbsp olive oil
  • 2 Tbsp water
  • ½ tsp garlic salt

Side Dish Instructions

  1. Cook Broccolini in hot oil in a large skillet over medium-high heat 4 to 5 minutes or until lightly browned.
  2. Add water; cover and cook 2 minutes or until water is evaporated and Broccolini is tender. Sprinkle with garlic salt.
