Ingredients
- 2 lb ground beef
- 1 onion, chopped
- 2 Tbsp minced garlic
- 3 Tbsp olive oil
- 3 Tbsp taco seasoning mix
- 2 (10-oz) cans diced tomatoes with green chiles
- ¼ cup water
- 1 (8-oz) pkg shredded Mexican-blend cheese
- 1 head romaine lettuce, shredded
- 2 avocados, sliced
Instructions
- Cook beef, onion, and garlic in hot oil in a large skillet over medium-high heat 8 minutes or until browned and crumbly; drain and return to skillet.
- Add taco seasoning, tomatoes, and water; reduce heat to medium-low. Cook 5 minutes or until slightly thickened and thoroughly heated. Remove from heat. Sprinkle with cheese; cover and let stand 2 minutes or until melted.
- Serve taco meat over lettuce, and top with avocado.
