Curry Chicken Ramen Bowls

Ingredients
- ½ (10-oz) pkg shredded carrots
- 1 Tbsp jarred minced garlic
- 1 Tbsp vegetable oil
- 1½ cups chicken broth
- ½ (14-oz) can unsweetened coconut milk
- ½ (12-oz) pkg broccoli florets
- 1 (3-oz) pkg ramen noodles, coarsely broken
- 1½ tsp curry powder
- 1 cup chopped or shredded rotisserie chicken
- ½ cup lightly salted peanuts
Instructions
- Cook carrots and garlic in hot oil in a large saucepan or Dutch oven over medium heat 5 minutes, stirring occasionally.
- Stir in broth, coconut milk, broccoli, ramen with seasoning packet, and curry powder. Season with salt and pepper, if desired. Bring to a boil. Reduce heat, and simmer, covered, 3 minutes.
- Stir in chicken; cook 2 to 3 minutes. Sprinkle each serving with nuts.
