Baked Greek Vegetable Quesadillas

Ingredients

  • 6 burrito-size flour tortillas
  • 1 cup hummus
  • ½ (10-oz) pkg spinach
  • ¾ cup sun-dried tomatoes in olive oil, drained
  • ½ cup chopped kalamata olives
  • 1 cup shredded mozzarella cheese
  • 1 cup crumbled feta cheese
  • 2 Tbsp olive oil

Instructions

  1. Preheat oven to 400°F. Place tortillas on a large greased rimmed baking sheet. Spread hummus on one side of each tortilla. Top with spinach, tomatoes, olives, and cheeses.
  2. Fold tortillas over filling; brush tortillas with oil. Bake 8 to 10 minutes or until cheese melts and tortillas are lightly browned. Cut into wedges.
