Baked Greek Vegetable Quesadillas

Ingredients
- 6 burrito-size flour tortillas
- 1 cup hummus
- ½ (10-oz) pkg spinach
- ¾ cup sun-dried tomatoes in olive oil, drained
- ½ cup chopped kalamata olives
- 1 cup shredded mozzarella cheese
- 1 cup crumbled feta cheese
- 2 Tbsp olive oil
Instructions
- Preheat oven to 400°F. Place tortillas on a large greased rimmed baking sheet. Spread hummus on one side of each tortilla. Top with spinach, tomatoes, olives, and cheeses.
- Fold tortillas over filling; brush tortillas with oil. Bake 8 to 10 minutes or until cheese melts and tortillas are lightly browned. Cut into wedges.
