Creamy Bell Pepper Chicken

Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • ¾ cup low-sodium chicken broth
  • ½ (8-oz) block cream cheese, cut into cubes
  • 1½ tsp salt-free garlic and herb seasoning

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in 2 Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done. Remove from skillet; keep warm.
  2. Cook bell peppers and onion in 2 Tbsp hot oil in same skillet over medium-high heat 8 minutes or until tender.
  3. Reduce heat to medium; add broth, cream cheese, and seasoning to skillet; cook 5 minutes or until creamy. Add chicken to skillet, turning to coat in sauce.
