Teriyaki Meatloaf
Rice Pilaf and Steamed Broccoli
Ingredients
- 2 lb ground beef
- ¾ cup quick-cooking oats
- ½ cup teriyaki sauce, divided (such as PF Chang's)
- 2 large eggs, lightly beaten
- 1 tsp garlic powder
Instructions
- Preheat oven to 400°F. Combine beef, oats, ¼ cup teriyaki sauce, eggs, and garlic powder in a large bowl, stirring to blend. Press mixture into a lightly greased 9-inch loaf pan.
- Spoon ¼ cup teriyaki sauce over meatloaf. Bake 1 hour or until no longer pink in center. Let stand 10 minutes before slicing.

- 2 Tbsp butter
- 2 cups long-grain white rice
- 1 (32-oz) carton low-sodium chicken broth
- 2 (12-oz) pkg broccoli florets
Side Dish Instructions
- Melt butter in a large saucepan over medium heat; add rice, and cook 1 minute. Stir in broth. Bring to a boil, cover, reduce heat, and simmer 18 to 20 minutes or until rice is tender.
- Steam broccoli according to package directions.
