Balsamic Bacon-Wrapped Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 12 slices bacon
  • 1 Tbsp all-purpose flour
  • 1 cup low-sodium chicken broth
  • 3 Tbsp balsamic vinegar
  • 1 Tbsp Dijon mustard
  • ½ tsp garlic powder

Instructions

  1. Preheat oven to 400°F. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper, if desired.
  2. Wrap 2 bacon strips around each chicken breast. Cook chicken in a large nonstick skillet 3 to 4 minutes per side or until bacon begins to brown. Transfer chicken to a foil-lined rimmed baking sheet. Bake 10 minutes or until chicken is done and bacon is crisp.
  3. Meanwhile, add flour to drippings in skillet; cook, stirring constantly, 2 minutes.
  4. Stir in broth, vinegar, mustard, and garlic powder; cook 2 to 3 minutes or until sauce is thickened. Spoon sauce over chicken.

  • 1 (12-oz) pkg frozen green beans
  • ¾ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook mashed potatoes and green beans separately according to package directions. Toss beans with garlic powder, salt, and pepper.
