Cajun Shrimp Pasta
Easy Mixed VegetablesIngredients
- 12 oz linguine
- ¼ cup butter
- 2 lb peeled and deveined, large raw shrimp
- 1 Tbsp Cajun seasoning
- 1 tsp lemon zest
- 3 Tbsp lemon juice
- ¼ cup chopped fresh parsley
- 1 (16-oz) carton heavy cream
- 1 cup shredded Parmesan cheese
Instructions
- Cook pasta according to package directions; set aside.
- Meanwhile, melt butter in a large Dutch oven over medium heat. Toss shrimp with seasoning; add to skillet and cook until pink. Remove from skillet. Add lemon zest, lemon juice, and parsley to drippings in skillet. Cook 1 minute.
- Gradually whisk in cream; bring to a simmer, and cook 5 to 6 minutes or until reduced by one-fourth. Gradually add cheese, stirring until melted. Add pasta; toss. Divide cheesy pasta among 6 plates; top with shrimp.

- 2 (12-oz) pkg vegetable medley (broccoli, cauliflower, and carrots)
- 3 Tbsp olive oil
- ¾ tsp garlic powder
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook vegetables according to package directions. Toss with oil, garlic powder, salt, and pepper.
