Ingredients
- 1½ lb ground sirloin
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp olive oil, divided
- 1 red or yellow bell pepper, chopped
- 1 pint grape tomatoes, halved
- 1 cup chopped kalamata olives (optional)
- 3 Tbsp minced garlic
- 1 (5-oz) pkg baby spinach
- ⅔ cup olive oil vinaigrette
- 1 cup crumbled feta cheese
Instructions
- Sprinkle beef with salt and pepper; cook beef in 2 Tbsp hot oil in a large skillet over medium heat 8 minutes or until crumbly.
- Meanwhile, cook bell pepper, tomatoes, and, if desired, olives in 1 Tbsp hot oil in a Dutch oven over medium-high heat 8 minutes or until browned and tender. Add garlic; cook 1 minute or until fragrant.
- Stir in beef, spinach, and vinaigrette; cook until spinach wilts, tossing to coat. Sprinkle with cheese. Serve over rice.
