Ingredients

  • 1½ lb ground sirloin
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp olive oil, divided
  • 1 red or yellow bell pepper, chopped
  • 1 pint grape tomatoes, halved
  • 1 cup chopped kalamata olives (optional)
  • 3 Tbsp minced garlic
  • 1 (5-oz) pkg baby spinach
  • ⅔ cup olive oil vinaigrette
  • 1 cup crumbled feta cheese

Instructions

  1. Sprinkle beef with salt and pepper; cook beef in 2 Tbsp hot oil in a large skillet over medium heat 8 minutes or until crumbly.
  2. Meanwhile, cook bell pepper, tomatoes, and, if desired, olives in 1 Tbsp hot oil in a Dutch oven over medium-high heat 8 minutes or until browned and tender. Add garlic; cook 1 minute or until fragrant.
  3. Stir in beef, spinach, and vinaigrette; cook until spinach wilts, tossing to coat. Sprinkle with cheese. Serve over rice.
