Cobb-Style Pasta Toss

Ingredients

  • 4 oz whole-grain rotini pasta (1½ cups) 
  • 1 pint cherry tomatoes (see Note), halved
  • 1 English cucumber, cut into half moons
  • ½ cup refrigerated yogurt Ranch dressing
  • 4 hard-cooked eggs, chopped
  • 1 avocado, chopped
  • ½ cup crumbled blue cheese

Instructions

  1. Cook pasta according to package directions; drain, and rinse under cold water. Toss together pasta and remaining ingredients in a large bowl. Chill until ready to serve, if desired.
