Cheese-Topped Salmon

Ingredients

  • 3 (5-oz) frozen salmon fillets, thawed
  • 2 Tbsp lemon juice, divided
  • ¼ tsp salt, divided
  • 6 Tbsp freshly grated Parmesan cheese
  • 1½ Tbsp butter, melted
  • 2¼ Tbsp olive-oil mayonnaise
  • 1½ green onions, chopped

Instructions

  1. Preheat oven to 350°F. Coat a broiler-safe baking dish with cooking spray. Place fillets in dish. Brush with 1 Tbsp lemon juice, and sprinkle with ⅛ tsp salt.
  2. Bake 10 to 20 minutes or until fish flakes with a fork.
  3. Meanwhile, combine 1 Tbsp lemon juice, Parmesan cheese, melted butter, mayonnaise, onions, and ⅛ tsp salt.
  4. Remove fish from oven, and top with cheese mixture. Increase oven temperature to broil.
  5. Broil fish 1 to 2 minutes or just until cheese mixture is golden brown.

  • ¾ lb Broccolini (about 1½ bunches)
  • 1½ Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 small cloves garlic, minced

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together Broccolini, oil, salt, pepper, and garlic on a rimmed baking sheet.
  2. Bake 10 minutes or until Broccolini begins to brown, stirring once.
