Loaded Cauliflower-Barbecue Chicken Casserole

Ingredients

  • 5 slices bacon, chopped
  • ¾ lb boneless, skinless chicken breasts
  • ½ (12-oz) pkg frozen mashed cauliflower
  • 2½ Tbsp sugar-free barbecue sauce
  • ½ cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 400°F. Cook bacon in a large skillet over medium heat until crisp; drain, reserving 1 Tbsp drippings in skillet.
  2. Cut chicken into bite-size pieces. Cook chicken in hot drippings in skillet over medium heat 3 to 5 minutes per side or until done.
  3. Meanwhile, prepare cauliflower according to package directions. Spread cauliflower in a greased 2-quart baking dish; top with chicken, barbecue sauce, cheese, and bacon.
  4. Bake 20 minutes or until thoroughly heated.

  • 1 lb asparagus, trimmed
  • 1½ Tbsp olive oil
  • ¼ tsp garlic powder
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer.
  2. Bake 18 minutes or until asparagus is tender and lightly charred.
