Spinach Ravioli Lasagna

Ingredients

  • 3 cups spinach, chopped
  • 2 Tbsp pesto
  • ⅔ cup Alfredo sauce
  • 2 Tbsp low-sodium chicken broth
  • 1½ cups frozen cheese ravioli
  • ⅔ cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F. Stir together spinach and pesto in a bowl.
  2. Stir together Alfredo sauce and broth in a separate bowl. Spread one-third of Alfredo in bottom of a lightly greased 9-inch baking dish.
  3. Top with half each of spinach mixture and ravioli. Repeat layers, ending with Alfredo.
  4. Cover and bake 25 minutes; uncover, sprinkle with cheese, and bake until bubbly.

Side Dish Ingredients

  • 2 cups salad greens
  • 1 Roma tomato, chopped
  • ½ cup thinly sliced cucumber
  • 3 Tbsp Italian dressing

Side Dish Instructions

  1. Toss together all ingredients in a medium-size bowl.
