Pork Chops with Avocado Sauce

Ingredients

  • 2 boneless center cut pork loin chops (or use boneless, skinless chicken breasts)
  • 1 Tbsp coconut oil, melted
  • ½ tsp salt, divided
  • ¼ tsp pepper
  • 1 avocado, cubed
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp fresh lemon juice
  • 1 tsp hot sauce
  • ½ tsp ground cumin
  • ¼ cup water

Instructions

  1. Preheat grill to medium-high heat. Brush pork with coconut oil; sprinkle with ¼ tsp each salt and pepper.
  2. Grill, covered, 4 minutes per side or until a meat thermometer inserted reads 145°F.
  3. Process avocado, olive oil, lemon juice, hot sauce, cumin, ¼ tsp salt, and water in a blender until smooth. Serve pork with avocado sauce.

Side Dish Ingredients

  • 1 lb asparagus, trimmed
  • ½ (8-oz) pkg sliced mushrooms
  • ⅓ cup organic chicken broth
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Bring all ingredients to a boil in a large skillet over medium-high heat. Cover, reduce heat, and simmer 6 minutes or until asparagus is crisp-tender.
