Pork Chops with Avocado Sauce
Pan-Steamed Asparagus and Mushrooms
Ingredients
- 2 boneless center cut pork loin chops (or use boneless, skinless chicken breasts)
- 1 Tbsp coconut oil, melted
- ½ tsp salt, divided
- ¼ tsp pepper
- 1 avocado, cubed
- 2 Tbsp extra virgin olive oil
- 1 Tbsp fresh lemon juice
- 1 tsp hot sauce
- ½ tsp ground cumin
- ¼ cup water
Instructions
- Preheat grill to medium-high heat. Brush pork with coconut oil; sprinkle with ¼ tsp each salt and pepper.
- Grill, covered, 4 minutes per side or until a meat thermometer inserted reads 145°F.
- Process avocado, olive oil, lemon juice, hot sauce, cumin, ¼ tsp salt, and water in a blender until smooth. Serve pork with avocado sauce.
Side Dish Ingredients
- 1 lb asparagus, trimmed
- ½ (8-oz) pkg sliced mushrooms
- ⅓ cup organic chicken broth
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Bring all ingredients to a boil in a large skillet over medium-high heat. Cover, reduce heat, and simmer 6 minutes or until asparagus is crisp-tender.
