Crustless Bell Pepper-Spinach Quiche
Ingredients
- ½ cup thinly sliced onion
- 1 red bell pepper, thinly sliced
- 3 Tbsp olive oil, divided
- 1 (5-oz) pkg baby spinach
- 8 large eggs
- 1 Tbsp chopped fresh thyme
- 1 tsp paprika
- ½ tsp salt
- ½ tsp pepper
- ½ cup grape tomatoes, halved
Instructions
- Preheat oven to 400°F. Cook onion and bell pepper in 2 Tbsp hot oil in a large skillet over medium heat 10 minutes.
- Add spinach; toss until wilted, about 2 minutes. Remove from heat; cool slightly. Transfer vegetable mixture to a 9-inch pie plate rubbed with 1 Tbsp oil.
- Whisk together eggs, thyme, paprika, salt, and pepper. Pour egg mixture over vegetables; sprinkle with tomatoes.
- Bake 40 to 45 minutes or until center is set.
