Crustless Bell Pepper-Spinach Quiche

Ingredients

  • ½ cup thinly sliced onion
  • 1 red bell pepper, thinly sliced
  • 3 Tbsp olive oil, divided
  • 1 (5-oz) pkg baby spinach
  • 8 large eggs
  • 1 Tbsp chopped fresh thyme
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup grape tomatoes, halved

Instructions

  1. Preheat oven to 400°F. Cook onion and bell pepper in 2 Tbsp hot oil in a large skillet over medium heat 10 minutes.
  2. Add spinach; toss until wilted, about 2 minutes. Remove from heat; cool slightly. Transfer vegetable mixture to a 9-inch pie plate rubbed with 1 Tbsp oil.
  3. Whisk together eggs, thyme, paprika, salt, and pepper. Pour egg mixture over vegetables; sprinkle with tomatoes.
  4. Bake 40 to 45 minutes or until center is set.
