Sausage-Scrambled Egg Lettuce Wraps

Ingredients

  • 1 green bell pepper, thinly sliced
  • ½ small onion, thinly sliced
  • ½ tsp pepper, divided
  • 3 Tbsp olive oil
  • ½ lb ground pork sausage
  • 8 large eggs
  • 8 large romaine lettuce leaves
  • ½ cup refrigerated salsa

Instructions

  1. Cook bell pepper, onion, and ¼ tsp pepper in hot oil in a large skillet over medium-high heat 4 to 5 minutes or until tender. Add sausage; cook 5 to 6 minutes or until browned and crumbly.
  2. Whisk together eggs and ¼ tsp pepper. Pour eggs into skillet; reduce heat to low, and cook, stirring gently, 7 minutes or until eggs are set.
  3. Arrange lettuce in stacks of 2 leaves each. Fill lettuce with egg mixture; top with salsa. Roll up to serve.
