Sausage-Scrambled Egg Lettuce Wraps
Ingredients
- 1 green bell pepper, thinly sliced
- ½ small onion, thinly sliced
- ½ tsp pepper, divided
- 3 Tbsp olive oil
- ½ lb ground pork sausage
- 8 large eggs
- 8 large romaine lettuce leaves
- ½ cup refrigerated salsa
Instructions
- Cook bell pepper, onion, and ¼ tsp pepper in hot oil in a large skillet over medium-high heat 4 to 5 minutes or until tender. Add sausage; cook 5 to 6 minutes or until browned and crumbly.
- Whisk together eggs and ¼ tsp pepper. Pour eggs into skillet; reduce heat to low, and cook, stirring gently, 7 minutes or until eggs are set.
- Arrange lettuce in stacks of 2 leaves each. Fill lettuce with egg mixture; top with salsa. Roll up to serve.
