Mango-Macadamia Nut Energy Bars

Ingredients

  • 1 cup macadamia nuts, coarsely chopped
  • ½ cup sunflower seeds
  • 3 Tbsp chia seeds
  • ½ cup chopped dried mango, divided
  • 2 Tbsp warm water
  • 1 large egg white
  • ¾ tsp kosher salt
  • 2 tsp coconut oil (or use olive oil)

Instructions

  1. Preheat oven to 350°F. Spread nuts and sunflower seeds on a rimmed baking sheet.
  2. Bake 15 to 20 minutes or until golden and fragrant, stirring occasionally. Cool slightly.
  3. Process nut mixture in a small food processor until coarsely chopped. Transfer to a large bowl; stir in chia seeds.
  4. Process ¼ cup mango, warm water, egg white, and salt until smooth, scraping sides as needed.
  5. Add mango mixture and ¼ chopped mango to nut mixture; stir until blended.
  6. Grease an 8-inch square pan with oil; spread nut-mango mixture into pan, pressing firmly into an even layer.
  7. Bake 20 to 25 minutes or until golden brown; cool 15 minutes. Cut into 8 bars.
