Mango-Macadamia Nut Energy Bars
Ingredients
- 1 cup macadamia nuts, coarsely chopped
- ½ cup sunflower seeds
- 3 Tbsp chia seeds
- ½ cup chopped dried mango, divided
- 2 Tbsp warm water
- 1 large egg white
- ¾ tsp kosher salt
- 2 tsp coconut oil (or use olive oil)
Instructions
- Preheat oven to 350°F. Spread nuts and sunflower seeds on a rimmed baking sheet.
- Bake 15 to 20 minutes or until golden and fragrant, stirring occasionally. Cool slightly.
- Process nut mixture in a small food processor until coarsely chopped. Transfer to a large bowl; stir in chia seeds.
- Process ¼ cup mango, warm water, egg white, and salt until smooth, scraping sides as needed.
- Add mango mixture and ¼ chopped mango to nut mixture; stir until blended.
- Grease an 8-inch square pan with oil; spread nut-mango mixture into pan, pressing firmly into an even layer.
- Bake 20 to 25 minutes or until golden brown; cool 15 minutes. Cut into 8 bars.
