Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 3 Tbsp olive oil
  • 4 cloves garlic, minced
  • ½ Tbsp smoked paprika
  • ½ Tbsp ground cumin
  • ½ Tbsp ground coriander
  • 1 tsp salt
  • ½ tsp cayenne pepper
  • 1 (12-count) pkg slider buns
  • 1 (17-oz) container honey jalapeño hummus
  • 1 (8-oz) pkg shredded lettuce
  • ½ small red onion, sliced

Instructions

  1. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Cut into 2-inch pieces and place in a large bowl. Add oil, garlic, paprika, cumin, coriander, salt, and cayenne; toss.
  2. Cover chicken, and chill 8 hours or up to 2 days.
  3. Preheat grill or grill pan to medium-high heat. Grill chicken 4 to 5 minutes per side or until done.
  4. Serve chicken on buns with hummus, lettuce, and onion.
