Lemon-Butter Salmon

Mashed Potatoes and Crispy Green Beans

Ingredients

  • 2 (6-oz) salmon fillets
  • ½ Tbsp olive oil
  • ¼ cup low-sodium chicken broth
  • 2 Tbsp lemon juice
  • 2 Tbsp heavy cream
  • 1½ Tbsp cold butter, cut into cubes
  • ½ tsp minced fresh thyme

Instructions

  1. Preheat oven to 425°F. Place fish on a lightly greased rimmed baking sheet. Brush with oil, and season with salt and pepper, if desired.
  2. Bake fish, 10 to 12 minutes or until fish flakes easily with a fork.
  3. Meanwhile, cook broth and lemon juice in a large skillet over medium-high heat until reduced by half. Add cream, and cook 3 minutes or until sauce is slightly thickened. Remove from heat, and whisk in cold butter until melted. Stir in thyme.
  4. Divide fish among 2 plates; spoon sauce over fish.

  • 1 (24-oz) pkg refrigerated mashed potatoes
  • ½ (16-oz) pkg frozen green beans
  • ¼ cup panko breadcrumbs
  • ½ Tbsp olive oil
  • ¼ tsp Italian seasoning

Side Dish Instructions

  1. Prepare potatoes according to package directions.
  2. Cook green beans according to package directions.
  3. Cook breadcrumbs in hot oil in a skillet over medium-high heat, stirring occasionally, until browned and crisp. Stir in seasoning. Sprinkle breadcrumbs mixture over green beans.
