Easy Fish and Chips

Ingredients

  • 1 (32-oz) pkg frozen French fries
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1½ cups panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 6 (6-oz) cod fillets
  • ¼ cup olive oil
  • 2 lemons, cut into wedges

Instructions

  1. Bake fries according to package directions.
  2. Meanwhile, place flour in a shallow bowl. Whisk eggs in a second shallow bowl. Stir together breadcrumbs, garlic powder, and thyme in a third shallow bowl.
  3. Season fish lightly with salt and pepper, if desired. Dredge in flour, dip in beaten egg, and dredge in breadcrumb mixture, pressing gently to coat.
  4. Cook fish in hot oil in a large skillet over medium heat until golden brown and fish flakes with a fork. Serve with lemon wedges.
