Easy Fish and Chips
Ingredients
- 1 (32-oz) pkg frozen French fries
- ½ cup all-purpose flour
- 2 large eggs
- 1½ cups panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp dried thyme
- 6 (6-oz) cod fillets
- ¼ cup olive oil
- 2 lemons, cut into wedges
Instructions
- Bake fries according to package directions.
- Meanwhile, place flour in a shallow bowl. Whisk eggs in a second shallow bowl. Stir together breadcrumbs, garlic powder, and thyme in a third shallow bowl.
- Season fish lightly with salt and pepper, if desired. Dredge in flour, dip in beaten egg, and dredge in breadcrumb mixture, pressing gently to coat.
- Cook fish in hot oil in a large skillet over medium heat until golden brown and fish flakes with a fork. Serve with lemon wedges.
