Ingredients

  • 1½ lb flank steak, trimmed
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • ½ lemon
  • 6 Tbsp butter, softened
  • 1 Tbsp garlic paste
  • 2 Tbsp chopped fresh chives
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Sprinkle steak with salt and pepper. Cook steak in hot oil in a cast-iron skillet or grill pan over medium-high heat 4 to 5 minutes per side or to desired doneness. Remove from skillet. Let stand 5 minutes before thinly slicing across the grain.
  2. Grate 1 tsp zest from lemon half. Stir together lemon zest, butter, garlic paste, chives, and parsley. Serve butter with steak.

  • 1½ lb small red potatoes, halved
  • 1 (5-oz) pkg spinach
  • 1 (8-oz) carton sour cream
  • ¼ cup butter, cut into pieces
  • 3 Tbsp garlic paste
  • ¾ tsp pepper
  • ½ tsp salt

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a medium saucepan. Cook 12 to 14 minutes or until tender; drain.
  2. Toss potatoes with spinach in same pan. Add sour cream, butter, garlic paste, pepper, and salt. Mash with a potato masher to desired consistency.
