Buffalo Chicken Pasta

Ingredients
- 12 oz penne pasta
- 1½ lb boneless, skinless chicken breasts, cubed
- 2 Tbsp olive oil
- ¾ cup Ranch dressing
- 1 cup crumbled blue cheese
- 1 (14.5-oz) can diced tomatoes, undrained
- 1 cup low-sodium chicken broth
- ½ cup buffalo sauce
- 6 oz cream cheese, softened and cubed
- ¼ tsp crushed red pepper
- 3 green onions, thinly sliced
Instructions
- Cook pasta according to package directions.
- Cook chicken in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned and done; remove from skillet. Stir together chicken, dressing, and blue cheese.
- Reduce heat to medium. Add tomatoes, broth, buffalo sauce, cream cheese, and red pepper to skillet; cook until thickened and creamy. Add pasta, tossing to coat in sauce. Stir in chicken mixture. Sprinkle with onions.
