Buffalo Chicken Pasta

Ingredients

  • 12 oz penne pasta
  • 1½ lb boneless, skinless chicken breasts, cubed
  • 2 Tbsp olive oil
  • ¾ cup Ranch dressing
  • 1 cup crumbled blue cheese
  • 1 (14.5-oz) can diced tomatoes, undrained
  • 1 cup low-sodium chicken broth
  • ½ cup buffalo sauce
  • 6 oz cream cheese, softened and cubed
  • ¼ tsp crushed red pepper
  • 3 green onions, thinly sliced

Instructions

  1. Cook pasta according to package directions.
  2. Cook chicken in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned and done; remove from skillet. Stir together chicken, dressing, and blue cheese.
  3. Reduce heat to medium. Add tomatoes, broth, buffalo sauce, cream cheese, and red pepper to skillet; cook until thickened and creamy. Add pasta, tossing to coat in sauce. Stir in chicken mixture. Sprinkle with onions.
