Mushroom-Tomato Ravioli
Ingredients
- 1 (20-oz) pkg cheese ravioli
- 1 (16-oz) pkg sliced mushrooms
- 1 pint grape tomatoes, halved
- 2 Tbsp olive oil
- 1½ cups marinara sauce
- 2 Tbsp butter
- ½ cup panko breadcrumbs
- ¼ cup grated Parmesan cheese
Instructions
- Cook ravioli according to package directions.
- Meanwhile, cook mushrooms and tomatoes in hot oil in a large skillet over medium-high heat 8 minutes or until browned. Stir in sauce; cook 3 minutes or until thoroughly heated.
- Melt butter in a skillet. Add breadcrumbs and cheese; cook 3 minutes or until golden.
- Divide ravioli among 6 bowls. Top with mushroom mixture and breadcrumbs.
