Mushroom-Tomato Ravioli

Ingredients

  • 1 (20-oz) pkg cheese ravioli
  • 1 (16-oz) pkg sliced mushrooms
  • 1 pint grape tomatoes, halved
  • 2 Tbsp olive oil
  • 1½ cups marinara sauce
  • 2 Tbsp butter
  • ½ cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese

Instructions

  1. Cook ravioli according to package directions.
  2. Meanwhile, cook mushrooms and tomatoes in hot oil in a large skillet over medium-high heat 8 minutes or until browned. Stir in sauce; cook 3 minutes or until thoroughly heated.
  3. Melt butter in a skillet. Add breadcrumbs and cheese; cook 3 minutes or until golden.
  4. Divide ravioli among 6 bowls. Top with mushroom mixture and breadcrumbs.
