Grilled Chicken, Couscous, and Watermelon Salad
Ingredients
- ½ cup whole wheat Israeli (pearl) couscous
- ¾ lb boneless, skinless chicken breasts, halved lengthwise
- 5 Tbsp olive oil vinaigrette, divided
- ¼ tsp kosher salt
- ¼ tsp freshly ground pepper
- ½ (5-oz) pkg spring mix
- ½ English cucumber, cut into half-moons
- 1½ cups watermelon balls (see Note)
- 1 avocado, sliced
- ⅓ cup thinly sliced red onion
- ½ (0.5-oz) pkg fresh basil, torn
- 6 Tbsp crumbled feta cheese
- 1½ Tbsp balsamic glaze
Instructions
- Preheat grill or grill pan to medium-high heat. Prepare couscous according to package directions.
- Brush chicken with 1 Tbsp vinaigrette; sprinkle with salt and pepper. Grill, covered, 4 to 6 minutes per side or until chicken is done. Thinly slice chicken.
- Toss together greens, cucumber, watermelon, avocado, onion, and basil in a large bowl.
- Top salad with chicken; sprinkle with cheese, and drizzle with ¼ cup vinaigrette and balsamic glaze.
