Grilled Chicken, Couscous, and Watermelon Salad

Ingredients

  • ½ cup whole wheat Israeli (pearl) couscous
  • ¾ lb boneless, skinless chicken breasts, halved lengthwise
  •  5 Tbsp olive oil vinaigrette, divided
  • ¼ tsp kosher salt
  • ¼ tsp freshly ground pepper
  • ½ (5-oz) pkg spring mix
  • ½ English cucumber, cut into half-moons
  • 1½ cups watermelon balls (see Note)
  • 1 avocado, sliced
  • ⅓ cup thinly sliced red onion
  • ½ (0.5-oz) pkg fresh basil, torn
  • 6 Tbsp crumbled feta cheese
  • 1½ Tbsp balsamic glaze

Instructions

  1. Preheat grill or grill pan to medium-high heat. Prepare couscous according to package directions.
  2. Brush chicken with 1 Tbsp vinaigrette; sprinkle with salt and pepper. Grill, covered, 4 to 6 minutes per side or until chicken is done. Thinly slice chicken.
  3. Toss together greens, cucumber, watermelon, avocado, onion, and basil in a large bowl.
  4. Top salad with chicken; sprinkle with cheese, and drizzle with ¼ cup vinaigrette and balsamic glaze.
