Greek Chicken Thighs

Roasted Sweet Potatoes and Green Beans

Ingredients

  • 4 bone-in, skin-on chicken thighs, skinned
  • 1 small onion, thinly sliced
  • ¼ cup chopped pimiento-stuffed olives
  • ½ cup organic chicken broth
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp Greek seasoning
  • ⅛ tsp salt
  • ⅛ tsp pepper

Instructions

  1. Preheat oven to 350°F. Combine chicken, onion, and olives in a 9- x 9-inch baking dish. Combine broth, juice, seasoning, salt, and pepper; pour over chicken.
  2. Cover and bake 45 minutes to 1 hour or until done, uncovering during last 15 minutes of baking.

Side Dish Ingredients

  • 2 sweet potatoes, cut into matchstick pieces
  • 1 Tbsp coconut oil, melted
  • ½ tsp smoked paprika
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 (12-oz) pkg frozen green beans

Side Dish Instructions

  1. Preheat oven to 350°F. Toss together potatoes, oil, paprika, salt, and pepper on a large lightly greased rimmed baking sheet.
  2. Bake 25 to 30 minutes or until browned, turning once.
  3. Meanwhile, prepare green beans according to package directions.
