Greek Chicken Thighs

Ingredients
- 4 bone-in, skin-on chicken thighs, skinned
- 1 small onion, thinly sliced
- ¼ cup chopped pimiento-stuffed olives
- ½ cup organic chicken broth
- 1 Tbsp fresh lemon juice
- 1 Tbsp Greek seasoning
- ⅛ tsp salt
- ⅛ tsp pepper
Instructions
- Preheat oven to 350°F. Combine chicken, onion, and olives in a 9- x 9-inch baking dish. Combine broth, juice, seasoning, salt, and pepper; pour over chicken.
- Cover and bake 45 minutes to 1 hour or until done, uncovering during last 15 minutes of baking.
Side Dish Ingredients
- 2 sweet potatoes, cut into matchstick pieces
- 1 Tbsp coconut oil, melted
- ½ tsp smoked paprika
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 (12-oz) pkg frozen green beans
Side Dish Instructions
- Preheat oven to 350°F. Toss together potatoes, oil, paprika, salt, and pepper on a large lightly greased rimmed baking sheet.
- Bake 25 to 30 minutes or until browned, turning once.
- Meanwhile, prepare green beans according to package directions.
