Turkey Sausage-Veggie Strata

Ingredients

  • 2 Tbsp coconut oil
  • ½ lb ground turkey sausage
  • 1 onion, chopped
  • 1 zucchini, cut into ¼-inch-thick rounds
  • 1 (8-oz) pkg sliced mushrooms
  • 2 cloves garlic, minced
  • 6 large eggs, lightly beaten
  • ⅛ tsp salt
  • ⅛ tsp pepper

Instructions

  1. Preheat oven to 400°F. Melt oil in a large nonstick skillet over medium-high heat. Add sausage, onion, zucchini, mushrooms, and garlic; cook 8 minutes or until sausage is browned and crumbly. Drain.
  2. Stir together sausage mixture, eggs, salt, and pepper in a large bowl until blended. Transfer to a lightly greased 9- x 9-inch baking dish.
  3. Bake 25 minutes or until center is set.

Side Dish Instructions

  1. Melt oil in a large skillet over medium-high heat; add artichokes, onion, and garlic. Cook 6 minutes, stirring occasionally, or until browned. Stir in lemon juice, salt, and pepper.
