Turkey Sausage-Veggie Strata
Skillet Artichoke Hearts
Ingredients
- 2 Tbsp coconut oil
- ½ lb ground turkey sausage
- 1 onion, chopped
- 1 zucchini, cut into ¼-inch-thick rounds
- 1 (8-oz) pkg sliced mushrooms
- 2 cloves garlic, minced
- 6 large eggs, lightly beaten
- ⅛ tsp salt
- ⅛ tsp pepper
Instructions
- Preheat oven to 400°F. Melt oil in a large nonstick skillet over medium-high heat. Add sausage, onion, zucchini, mushrooms, and garlic; cook 8 minutes or until sausage is browned and crumbly. Drain.
- Stir together sausage mixture, eggs, salt, and pepper in a large bowl until blended. Transfer to a lightly greased 9- x 9-inch baking dish.
- Bake 25 minutes or until center is set.

- ⅛ tsp salt

Side Dish Instructions
- Melt oil in a large skillet over medium-high heat; add artichokes, onion, and garlic. Cook 6 minutes, stirring occasionally, or until browned. Stir in lemon juice, salt, and pepper.
