Ingredients
- 2 lb top sirloin steak
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 3 Tbsp olive oil, divided
- 6 large eggs
Instructions
- Sprinkle steak with ½ tsp each salt and pepper. Cook steak in 1½ Tbsp hot oil over medium-high heat in a large nonstick skillet 5 to 8 minutes per side or to desired doneness. Let stand 5 minutes. Thinly slice across the grain.
- Heat 1½ Tbsp oil in same skillet over medium heat; crack eggs into skillet. Cook 2 minutes per side or until whites are set and yolks are cooked to desired doneness. Sprinkle with ¼ tsp each salt and pepper.
Side Dish Ingredients
- ½ cup olive bruschetta topping
- 1½ Tbsp sherry vinegar
- 1 Tbsp olive oil (or use oil from bruschetta jar)
- 1 Tbsp Worcestershire sauce
- 2 tsp prepared horseradish
- 1 tsp hot sauce (optional)
- 1½ pints grape tomatoes, halved
- ½ cup sliced celery
- ½ red onion, chopped
Side Dish Instructions
- Combine bruschetta topping, vinegar, oil, Worcestershire, horseradish, and, if desired, hot sauce in a large bowl. Stir in tomatoes, celery, and onion.
