Ingredients

  • 2 lb top sirloin steak
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 3 Tbsp olive oil, divided
  • 6 large eggs

Instructions

  1. Sprinkle steak with ½ tsp each salt and pepper. Cook steak in 1½ Tbsp hot oil over medium-high heat in a large nonstick skillet 5 to 8 minutes per side or to desired doneness. Let stand 5 minutes. Thinly slice across the grain.
  2. Heat 1½ Tbsp oil in same skillet over medium heat; crack eggs into skillet. Cook 2 minutes per side or until whites are set and yolks are cooked to desired doneness. Sprinkle with ¼ tsp each salt and pepper.

Side Dish Ingredients

  • ½ cup olive bruschetta topping
  • 1½ Tbsp sherry vinegar
  • 1 Tbsp olive oil (or use oil from bruschetta jar)
  • 1 Tbsp Worcestershire sauce
  • 2 tsp prepared horseradish
  • 1 tsp hot sauce (optional)
  • 1½ pints grape tomatoes, halved
  • ½ cup sliced celery
  • ½ red onion, chopped

Side Dish Instructions

  1. Combine bruschetta topping, vinegar, oil, Worcestershire, horseradish, and, if desired, hot sauce in a large bowl. Stir in tomatoes, celery, and onion.
