Ingredients

  • 2 (6.4-oz) box Mexican-style rice mix
  • 2 lb boneless, skinless chicken breasts
  • 1 Tbsp salt-free fiesta-lime seasoning (such as Mrs. Dash)
  • 2 Tbsp olive oil
  • 1½ cups shredded Mexican-blend cheese
  • ½ cup creamy salsa verde sauce
  • 1 cup tri-color tortilla strips

Instructions

  1. Cook rice mix according to package directions.
  2. Meanwhile, cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; sprinkle with seasoning.
  3. Cook chicken in hot oil in a large nonstick skillet over medium heat 5 to 6 minutes per side or until chicken is done. Sprinkle chicken with cheese; let stand 1 minute or until cheese is melted.
  4. Divide rice mix among 6 shallow bowls; top with cheesy chicken. Drizzle with salsa verde sauce and sprinkle with tortilla strips.
