Salisbury Steak Meatballs

Mashed Cauliflower and Balsamic Green Beans

Ingredients

  • 1½ lb lean ground beef
  • ½ cup panko breadcrumbs (preferably whole wheat)
  • 2 Tbsp ketchup
  • 1 Tbsp Dijon mustard
  • 1 large egg
  • 2 cloves garlic, minced
  • ½ tsp pepper
  • 2 Tbsp canola oil, divided
  • 1 onion, thinly sliced
  • 1 (14.5-oz) can low-sodium beef broth
  • 1 Tbsp Worcestershire sauce
  • 3 Tbsp cornstarch 

Instructions

  1. Gently mix together beef, panko, ketchup, mustard, egg, garlic, and pepper in a large bowl using your hands; shape into 2-inch meatballs.
  2. Cook meatballs in 1 Tbsp hot oil in a large skillet over medium-high heat 5 minutes or until browned. Remove meatballs from skillet; add 1 Tbsp oil to drippings in skillet.
  3. Add onion to skillet; cook 6 minutes or until tender. Stir together broth, Worcestershire sauce, and cornstarch; add to onion in skillet, and simmer 2 minutes or until sauce is thickened. Return meatballs to skillet, and cook 2 minutes or until done.

  • 2 (12-oz) pkg frozen mashed cauliflower 
  • 1½ lb green beans, trimmed
  • 1 clove garlic, minced
  • 2 Tbsp canola oil
  • ½ cup low-sodium chicken broth
  • 2 Tbsp balsamic vinegar

Side Dish Instructions

  1. Cook mashed cauliflower according to package directions.
  2. Sauté green beans and garlic in hot oil in a large skillet 2 minutes or until green beans begin to brown.
  3. Add broth to skillet. Cover and cook 3 minutes or until green beans are tender; uncover and add vinegar. Cook 2 minutes or until liquid is reduced and slightly thickened.
