Ingredients

  • 12 oz whole-grain rotini pasta
  • 6 Tbsp butter
  • 2 zucchini, sliced
  • 2 yellow squash, sliced
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • 1½ cups crumbled goat cheese
  • ⅓ cup chopped fresh basil

Instructions

  1. Cook pasta according to package directions, reserving ½ cup pasta water.
  2. Meanwhile, melt butter in a large skillet over medium heat. Cook 3 minutes, whisking constantly, until butter browns and smells nutty. Add zucchini, yellow squash, garlic, salt, and pepper; cook 6 minutes or until lightly browned and tender.
  3. Stir in pasta, cheese, and ½ cup pasta water, if needed, to skillet; toss to coat. Sprinkle with basil.
