Summer Squash and Goat Cheese Pasta

Ingredients
- 12 oz whole-grain rotini pasta
- 6 Tbsp butter
- 2 zucchini, sliced
- 2 yellow squash, sliced
- 3 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 1½ cups crumbled goat cheese
- ⅓ cup chopped fresh basil
Instructions
- Cook pasta according to package directions, reserving ½ cup pasta water.
- Meanwhile, melt butter in a large skillet over medium heat. Cook 3 minutes, whisking constantly, until butter browns and smells nutty. Add zucchini, yellow squash, garlic, salt, and pepper; cook 6 minutes or until lightly browned and tender.
- Stir in pasta, cheese, and ½ cup pasta water, if needed, to skillet; toss to coat. Sprinkle with basil.
