Clock

Ingredients

  • ½ cup cane sugar
  • ½ cup water
  • 1 habanero pepper, halved and seeded (see Note)
  • Lime wedge
  • Tajin seasoning
  • 3 oz pineapple juice
  • 1½ oz silver tequila
  • 1 oz lime juice
  • Garnish: pineapple wedge

  1. Combine sugar, water, and habanero pepper in a small saucepan over medium heat, stirring until sugar dissolves. Bring to a boil, reduce heat, and simmer 5 minutes. Remove from heat; cool 30 minutes.
  2. Strain mixture, discarding pepper. Chill syrup up to 2 weeks. It yields ¾ cup.
  3. Rub rim of an old-fashioned glass with a lime wedge; dip glass rim in seasoning to coat edge. Stir together pineapple juice, tequila, lime juice, and 1 oz chilled habanero simple syrup.
  4. Pour pineapple juice mixture in prepared glass filled halfway with ice.
