Pineapple-Habanero Margarita
Ingredients
- ½ cup cane sugar
- ½ cup water
- 1 habanero pepper, halved and seeded (see Note)
- Lime wedge
- Tajin seasoning
- 3 oz pineapple juice
- 1½ oz silver tequila
- 1 oz lime juice
- Garnish: pineapple wedge
Instructions
- Combine sugar, water, and habanero pepper in a small saucepan over medium heat, stirring until sugar dissolves. Bring to a boil, reduce heat, and simmer 5 minutes. Remove from heat; cool 30 minutes.
- Strain mixture, discarding pepper. Chill syrup up to 2 weeks. It yields ¾ cup.
- Rub rim of an old-fashioned glass with a lime wedge; dip glass rim in seasoning to coat edge. Stir together pineapple juice, tequila, lime juice, and 1 oz chilled habanero simple syrup.
- Pour pineapple juice mixture in prepared glass filled halfway with ice.
