Summer Squash and Goat Cheese Pasta

Ingredients
- 4 oz whole-grain rotini pasta
- 2 Tbsp butter
- 1 small zucchini, sliced
- 1 small yellow squash, sliced
- 1 clove garlic, minced
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup crumbled goat cheese
- 2 Tbsp chopped fresh basil
Instructions
- Cook pasta according to package directions, reserving ¼ cup pasta water.
- Meanwhile, melt butter in a large skillet over medium heat. Cook 3 minutes, whisking constantly, until butter browns and smells nutty. Add zucchini, yellow squash, garlic, salt, and pepper; cook 6 minutes or until lightly browned and tender.
- Stir in pasta, cheese, and, if needed, ¼ cup pasta water to skillet; toss. Sprinkle with basil.
