Ingredients
- ¾ lb ground beef
- ½ onion, diced
- ½ cup refrigerated salsa
- ¼ cup mayonnaise
- 1 tsp chili powder
- 1 cup shredded Mexican-blend cheese, divided
- ½ (8-oz) pkg shredded lettuce
- ½ cup quartered grape tomatoes
Instructions
- Preheat oven to 350°F. Cook beef and onion in a nonstick skillet over medium heat until beef is browned and crumbly. Drain, and return to pan.
- Add salsa, mayonnaise, chili powder, and ½ cup cheese to skillet; mix well. Spoon into a small greased baking dish.
- Bake 20 minutes. Top with ½ cheese; bake 5 minutes longer or until cheese melts.
- Serve over lettuce, and top with tomatoes.
Side Dish Ingredients
- 2 small avocados, sliced
- 1 Tbsp lime juice
- 1½ tsp extra virgin olive oil
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 Tbsp crumbled cotija cheese (or use feta cheese)
Side Dish Instructions
- Arrange sliced avocados on a platter. Drizzle with lime juice and oil; sprinkle with salt, pepper, and cheese.
