Caramelized Onion, Spinach, and Orzo Frittata

Ingredients
- 2 oz whole wheat orzo (about ⅓ cup)
- 1½ Tbsp butter
- ¾ cup thinly sliced sweet onion
- 1 clove garlic, minced
- ½ (5-oz) pkg baby spinach
- 6 large eggs, lightly beaten
- ½ cup shredded mozzarella cheese, divided
- 2 Tbsp freshly grated Parmesan cheese, divided
- 1 Tbsp chopped fresh dill (or use 1 tsp dried dill)
- ¼ tsp salt
- ⅛ tsp pepper
Instructions
- Preheat oven to 375°F. Cook orzo according to package directions.
- Meanwhile, melt butter in a small ovenproof skillet over medium-high heat. Add onion; cook 5 minutes, stirring often. Reduce heat to medium; cook 5 minutes or until golden brown, stirring often.
- Add garlic; cook 1 minute. Stir in spinach; cook 1 to 2 minutes or until wilted. Stir in orzo.
- Combine eggs, ¼ cup mozzarella, 1 Tbsp Parmesan, dill, salt, and pepper. Pour into skillet; reduce heat to medium-low.
- Cook 4 to 5 minutes, without stirring, until edges are set. Sprinkle with ¼ cup mozzarella and 1 Tbsp Parmesan. Transfer skillet to oven.
- Bake 9 minutes or until center is set. Let stand 5 minutes before serving; cut into 3 wedges.

- 1½ Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 1 tsp Dijon mustard
- ⅛ tsp salt
- 1 clove garlic, minced
- 1 (5-oz) pkg baby spinach
- ¼ cup mandarin oranges in 100% fruit juice, drained
- 3 Tbsp crumbled feta cheese
- 1½ Tbsp chopped walnuts
Side Dish Instructions
- Whisk together oil, vinegar, mustard, salt, and garlic in a bowl. Add spinach, oranges, cheese, and nuts; toss.
