Ingredients

  • 2 oz whole wheat orzo (about ⅓ cup)
  • 1½ Tbsp butter
  • ¾ cup thinly sliced sweet onion
  • 1 clove garlic, minced
  • ½ (5-oz) pkg baby spinach
  • 6 large eggs, lightly beaten
  • ½ cup shredded mozzarella cheese, divided
  • 2 Tbsp freshly grated Parmesan cheese, divided
  • 1 Tbsp chopped fresh dill (or use 1 tsp dried dill)
  • ¼ tsp salt
  • ⅛ tsp pepper

Instructions

  1. Preheat oven to 375°F. Cook orzo according to package directions.
  2. Meanwhile, melt butter in a small ovenproof skillet over medium-high heat. Add onion; cook 5 minutes, stirring often. Reduce heat to medium; cook 5 minutes or until golden brown, stirring often.
  3. Add garlic; cook 1 minute. Stir in spinach; cook 1 to 2 minutes or until wilted. Stir in orzo.
  4. Combine eggs, ¼ cup mozzarella, 1 Tbsp Parmesan, dill, salt, and pepper. Pour into skillet; reduce heat to medium-low.
  5. Cook 4 to 5 minutes, without stirring, until edges are set. Sprinkle with ¼ cup mozzarella and 1 Tbsp Parmesan. Transfer skillet to oven.
  6. Bake 9 minutes or until center is set. Let stand 5 minutes before serving; cut into 3 wedges.

  • 1½ Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • ⅛ tsp salt
  • 1 clove garlic, minced
  • 1 (5-oz) pkg baby spinach
  • ¼ cup mandarin oranges in 100% fruit juice, drained
  • 3 Tbsp crumbled feta cheese
  • 1½ Tbsp chopped walnuts

Side Dish Instructions

  1. Whisk together oil, vinegar, mustard, salt, and garlic in a bowl. Add spinach, oranges, cheese, and nuts; toss.
