Mustard Roasted Chicken and Potatoes

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 3 Tbsp olive oil
  • 2 lb small red potatoes, halved
  • 3 Tbsp Dijon mustard
  • 3 cloves garlic, minced
  • 2 tsp dried crushed rosemary
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 425°F. Toss together all ingredients on a large rimmed baking sheet; spread in a singe layer.
  2. Bake 20 to 25 minutes or until chicken is done and potatoes are tender.
