Herb-Crusted Cod
Roasted Potatoes and Green Beans with BaconIngredients
- 6 (6-oz) cod fillets
- ½ tsp salt
- ½ tsp pepper
- 1 large egg
- 1 cup panko breadcrumbs
- 2 Tbsp butter, melted
- 2 Tbsp chopped fresh dill
- 2 Tbsp chopped fresh parsley
Instructions
- Preheat oven to 425°F. Sprinkle fish with salt and pepper.
- Beat egg lightly in a shallow dish. Stir together panko, melted butter, dill, and parsley in a separate shallow dish.
- Dip fish in egg, dredge in panko mixture, and place on a greased rimmed baking sheet.
- Bake 10 to 12 minutes, depending upon thickness of fish, until breadcrumbs are golden and fish flakes with a fork.
Side Dish Ingredients
- 1 (24-oz) pkg Honey Gold potatoes, quartered
- 1 onion, thinly sliced
- 6 slices bacon, chopped
- ½ tsp salt
- ½ tsp pepper
- 1 (8-oz) pkg green beans
Side Dish Instructions
- Preheat oven to 425°F. Toss together potatoes and onion on a rimmed baking sheet; spread in a single layer. Sprinkle with bacon, salt, and pepper.
- Bake 15 minutes. Add green beans; toss and spread in a single layer. Bake 10 minutes or until potatoes are browned and tender.
