Ingredients

  • 2 (6-oz) salmon fillets
  • ⅛ tsp garlic powder
  • ⅛ tsp salt
  • 2 Tbsp butter
  • 1 Tbsp chopped fresh parsley

Instructions

  1. Sprinkle fish with garlic powder and salt. Melt butter in a large skillet over medium-high heat.
  2. Cook fish, skin side up, 5 to 8 minutes or until browned. Gently flip fish, and cook 3 minutes or until fish flakes with a fork. Sprinkle with parsley.

  • ⅓ cup quick-cooking (pearled) farro
  • 3 cups arugula
  • ¾ cup sliced strawberries (or use peaches)
  • 3 Tbsp chopped walnuts
  • 2 Tbsp refrigerated lemon vinaigrette

Side Dish Instructions

  1. Cook farro according to package directions. Combine farro, arugula, strawberries, nuts, and vinaigrette; toss.
