Garlic Butter Salmon

Ingredients
- 2 (6-oz) salmon fillets
- ⅛ tsp garlic powder
- ⅛ tsp salt
- 2 Tbsp butter
- 1 Tbsp chopped fresh parsley
Instructions
- Sprinkle fish with garlic powder and salt. Melt butter in a large skillet over medium-high heat.
- Cook fish, skin side up, 5 to 8 minutes or until browned. Gently flip fish, and cook 3 minutes or until fish flakes with a fork. Sprinkle with parsley.

- ⅓ cup quick-cooking (pearled) farro
- 3 cups arugula
- ¾ cup sliced strawberries (or use peaches)
- 3 Tbsp chopped walnuts
- 2 Tbsp refrigerated lemon vinaigrette
Side Dish Instructions
- Cook farro according to package directions. Combine farro, arugula, strawberries, nuts, and vinaigrette; toss.
