Ingredients

  • ½ lb peeled and deveined, medium-size raw shrimp
  • 1 tsp Creole seasoning
  • 2 tsp butter
  • 2 tsp minced garlic
  • 2 green onions, chopped and divided
  • ⅔ cup halved grape tomatoes
  • ⅓ cup heavy cream
  • 2½ Tbsp freshly grated Parmesan cheese

Instructions

  1. Toss shrimp with Creole seasoning in a bowl. Melt butter in a large skillet over medium-high heat; add shrimp, and cook, stirring, 2 to 3 minutes per side or until shrimp turn pink. Remove shrimp from skillet.
  2. Sauté garlic, half of onions, and tomatoes in same skillet 3 minutes. Remove to a plate.
  3. Reduce heat to medium; add cream. Simmer 10 minutes or until slightly thickened. Add cheese. Return shrimp and tomato mixture to skillet; toss. Sprinkle with remaining onions. Serve over Garlicky Cauliflower "Grits" recipe.

  • ½ (12-oz) pkg cauliflower florets
  • ⅛ tsp garlic powder
  • 2 tsp olive oil
  • 2 Tbsp low-sodium chicken broth
  • ⅛ tsp hot sauce

Side Dish Instructions

  1. Pulse cauliflower in a food processor until it resembles grits.
  2. Cook cauliflower and garlic powder in hot oil in a saucepan over medium heat 4 minutes, stirring often. Add broth and hot sauce. Cook 12 minutes or until liquid evaporates, stirring often.
