Balsamic-Strawberry Pork Tenderloin
Wild Rice and Roasted AsparagusIngredients
- 2 (1-lb) pork tenderloins, trimmed
- 1 Tbsp Montreal steak seasoning
- 6 slices bacon
- 1 cup sliced strawberries
- ½ cup balsamic vinegar
Instructions
- Preheat oven to 400°F. Sprinkle pork with seasoning; wrap each tenderloin in bacon.
- Heat a large ovenproof skillet over medium-high heat; add pork, and cook 4 to 5 minutes per side or until bacon is browned.
- Transfer skillet to oven, and bake 10 minutes or until a thermometer inserted in thickest portion of pork registers 145°F.
- Meanwhile, bring strawberries and vinegar to a boil in a saucepan; boil 5 minutes or until thickened. Serve over pork.

- 1 (8-oz) pkg gluten-free wild rice
- 2 lb asparagus, trimmed
- 1 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F. Cook rice according to package directions.
- Meanwhile, toss together asparagus and oil on a large rimmed baking sheet; spread in a single layer. Season with salt and pepper. Bake 15 minutes or until asparagus is browned and tender.
