Balsamic-Strawberry Pork Tenderloin

Wild Rice and Roasted Asparagus

Ingredients

  • 2 (1-lb) pork tenderloins, trimmed
  • 1 Tbsp Montreal steak seasoning
  • 6 slices bacon
  • 1 cup sliced strawberries
  • ½ cup balsamic vinegar

Instructions

  1. Preheat oven to 400°F. Sprinkle pork with seasoning; wrap each tenderloin in bacon.
  2. Heat a large ovenproof skillet over medium-high heat; add pork, and cook 4 to 5 minutes per side or until bacon is browned.
  3. Transfer skillet to oven, and bake 10 minutes or until a thermometer inserted in thickest portion of pork registers 145°F.
  4. Meanwhile, bring strawberries and vinegar to a boil in a saucepan; boil 5 minutes or until thickened. Serve over pork.

  • 1 (8-oz) pkg gluten-free wild rice
  • 2 lb asparagus, trimmed
  • 1 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Cook rice according to package directions.
  2. Meanwhile, toss together asparagus and oil on a large rimmed baking sheet; spread in a single layer. Season with salt and pepper. Bake 15 minutes or until asparagus is browned and tender.
