Roasted Beet Salad with Goat Cheese

Ingredients

  • 2 (6-oz) salmon fillets
  • 2 Tbsp honey
  • 1 Tbsp gluten-free soy sauce

Instructions

  1. Preheat broiler. Place fish on a lightly greased broiler-safe pan. Combine honey and soy sauce; brush over fish.
  2. Broil 8 to 10 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 2 large beets, peeled and cut into wedges
  • 2 Tbsp olive oil, divided
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • ¼ cup sliced almonds
  • ½ Tbsp balsamic vinegar
  • ½ Tbsp honey
  • ½ tsp Dijon mustard
  • 1 (5-oz) pkg baby arugula
  • 1 oz goat cheese, crumbled (or use feta cheese)

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together beets, 1 Tbsp oil, and ⅛ tsp each salt and pepper on a rimmed baking sheet coated with cooking spray; spread in a single layer.
  2. Bake 30 minutes, turning occasionally, until beets are tender, adding nuts during last 5 minutes of baking. Cool 10 minutes.
  3. Whisk together 1 Tbsp oil, vinegar, honey, mustard, and ⅛ tsp each salt and pepper in a medium bowl. Add arugula, beets, and nuts; toss. Sprinkle with cheese.
