Marinated Steak Kabobs

Grilled Corn and Rice Toss and Broccoli

Ingredients

  • Wooden skewers
  • 2 lb London broil steak, cut into 1½-inch cubes
  • ¼ cup low-sodium soy sauce
  • 2 Tbsp olive oil
  • 4 cloves garlic, minced

Instructions

  1. Soak wooden skewers in water 30 minutes.
  2. Combine steak, soy sauce, oil, and garlic in a zip-top plastic bag. Seal bag, and chill 30 minutes or up to 8 hours.
  3. Preheat grill to medium-high heat. Remove steak from marinade, discarding marinade.
  4. Thread steak on skewers. Season with salt and pepper, if desired. Grill kabobs 5 to 6 minutes per side or to desired doneness.

Side Dish Ingredients

  • 1½ cups long-grain white rice
  • 4 ears corn, shucked and cleaned
  • 2 Tbsp olive oil, divided
  • 2 (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Preheat grill to medium-high heat.
  2. Cook rice according to package directions. Meanwhile, rub corn with 1 Tbsp oil. Grill corn, covered, 5 minutes per side or until tender and slightly charred.
  3. Cut kernels from cob; discard cobs. Toss kernels with rice and remaining oil. Season with salt and pepper, if desired.
  4. Steam broccoli according to package directions.
