Blueberry Pancakes
Sausage PattiesIngredients
- 4 cups pancake mix
- 1 tsp baking soda
- 2 cups buttermilk
- 4 large eggs
- 1 Tbsp sugar
- 1 tsp vanilla extract
- 1 pint blueberries
- ½ (24-oz) bottle pancake syrup
Instructions
- Stir together pancake mix and baking soda in a large bowl. Whisk in buttermilk, eggs, sugar, and vanilla until combined.
- Pour about ¼ cup batter for each pancake onto a large lightly greased nonstick skillet; sprinkle with 4 to 5 blueberries, and cook until edges are dry and bubbles form on top of pancake.
- Turn and cook 1 minute or until browned. Serve pancakes with syrup.

Side Dish Instructions
- Slice sausage, and cook in a skillet over medium heat until no longer pink; drain.
