Blueberry Pancakes

Ingredients

  • 4 cups pancake mix
  • 1 tsp baking soda
  • 2 cups buttermilk
  • 4 large eggs
  • 1 Tbsp sugar
  • 1 tsp vanilla extract
  • 1 pint blueberries
  • ½ (24-oz) bottle pancake syrup

Instructions

  1. Stir together pancake mix and baking soda in a large bowl. Whisk in buttermilk, eggs, sugar, and vanilla until combined.
  2. Pour about ¼ cup batter for each pancake onto a large lightly greased nonstick skillet; sprinkle with 4 to 5 blueberries, and cook until edges are dry and bubbles form on top of pancake.
  3. Turn and cook 1 minute or until browned. Serve pancakes with syrup.

  • 1 (16-oz) pkg ground pork sausage

Side Dish Instructions

  1. Slice sausage, and cook in a skillet over medium heat until no longer pink; drain.
